Slow Cooker Cabbage Roll Soup

- In a large skillet over medium-high heat, cook ground beef, ground pork, and onions until meat is browned and onions are softened.
- Transfer the meat mixture to the slow cooker. Add cabbage, carrots, crushed tomatoes, diced tomatoes, beef broth, tomato paste, Worcestershire sauce, paprika, dried thyme, salt, black pepper, and brown sugar. Mix until well combined, and then place the bay leaves on top.
- Cover and cook on high for 2½ to 3½ hours or low for 5 to 6 hours. Cook until the carrots are soft.
- Fifteen minutes before cook time is up, add cooked rice and mix until well combined. Cover and continue to cook for 15 minutes. Remove bay leaves before serving.
Notes
- For a thicker soup, you can mash some of the cooked carrots against the side of the slow cooker before adding the rice. Adjust seasoning with extra salt and pepper to taste.
