My First Goulash

I learned this recipe from my neighbor, Mrs. Gable. She brought it over one snowy night. My whole family loved it. I still laugh at that. I had to get the recipe right away.

It is a cozy, one-pot wonder. You just brown the meat and add everything else. The smell fills your whole house. Doesn’t that smell amazing? It tells everyone dinner is almost ready.

Why This Dish Matters

This is more than just food. It is a warm hug in a bowl. It brings people to the table. That matters so much today. We are all so busy.

It also helps you use what you have. No celery? That is okay. Use a bell pepper. This recipe is your friend, not a boss. What is your favorite pasta shape to use in soups?

Let’s Get Cooking

Start with your big, heavy pot. Heat the oil and add the beef. Break it up with your spoon. Then add the onion, carrot, celery, and garlic. Cook until they smell sweet and look soft.

Now, the fun part. In goes everything else! Tomatoes, broth, water, and spices. Let it bubble, then simmer for 20 minutes. This makes the flavors become best friends.

The Secret Step

After simmering, stir in the dry macaroni. This is the secret. The pasta cooks right in the sauce. It soaks up all that good flavor. Fun fact: This is why it’s sometimes called “American Chop Suey”!

Keep the lid on and let it cook. Stir it sometimes so nothing sticks. If it looks dry, add a little hot water. You want it nice and saucy. Do you prefer your goulash more soupy or thick?

The Final Touch

When the pasta is tender, turn off the heat. Stir in the fresh parmesan cheese. This is magic. It makes the sauce creamy and rich. Taste it. Add a pinch more salt if it needs it.

Ladle it into bowls. Add more cheese on top. This dish waits for no one. Serve it right away. It teaches us that simple, shared meals are the best. What memory does a cozy, steamy bowl of food bring back for you?

My Cozy Kitchen Goulash

Hello, my dear! Come sit. Let’s make my American Goulash. This is my go-to pot of comfort. It reminds me of my own grandma’s kitchen. The smell alone will make everyone gather around. Doesn’t that sound wonderful? We just use one big pot. That means less washing up later. I still laugh at that. My grandson calls it “confetti pasta” because of all the colorful bits. Let’s get started.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 large carrot, grated
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon sugar
  • 1 (28 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 cups chicken stock
  • 1 cup water
  • 2 cups dry elbow macaroni
  • 1 cup freshly grated parmesan cheese, plus more for serving

Instructions

Step 1: Grab your favorite heavy pot. Warm up the olive oil over medium-high heat. Add your ground beef. Break it up with your spoon for about a minute. You just want it to start browning. We are not cooking it all the way yet. This builds flavor right from the start.

Step 2: Now, add your onion, carrot, celery, and garlic. Oh, that sizzle! Stir it all until the veggies soften. This takes about five minutes. Then, sprinkle in the salt, oregano, pepper, and sugar. The sugar is my secret. It just balances the tomatoes. (A hard-learned tip: grate the carrot right into the pot. It saves you a dish to wash!)

Step 3: Time for the saucy part. Pour in the crushed tomatoes, tomato paste, Worcestershire, chicken stock, and water. Stir it all together. Bring it to a lively boil. Then, turn the heat down to a gentle simmer. Put the lid on and let it get happy for 20 minutes. The smell will be amazing. What’s your favorite kitchen smell? Share below!

Step 4: Uncover the pot. Stir in your dry macaroni. Make sure every piece gets coated. Cover it again and simmer for another 20 minutes. Stir it now and then, especially at the beginning. This stops the pasta from sticking to the bottom. If it looks dry, add a splash of hot water. We want it nice and saucy.

Step 5: Finally, turn off the heat. Stir in that fresh-grated parmesan cheese. It makes everything rich and creamy. Give it a taste. Does it need a pinch more salt or pepper? Now, ladle it into bowls. Serve it with extra cheese for everyone to sprinkle. It’s pure, simple comfort in a bowl.

Three Fun Twists to Try

This recipe is like a good friend. It loves to play dress-up! Here are three easy ways to change its outfit. They are all so simple and tasty.

  • The Garden Swap: Use a plant-based ground “meat” or lentils instead of beef. It’s just as hearty.
  • The Spicy Kick: Add a pinch of red pepper flakes with the oregano. It gives it a warm, happy zing.
  • The Autumn Version: Try small shell pasta. Stir in a handful of fresh spinach right at the end. It wilts perfectly.

Which one would you try first? Comment below!

How to Serve Your Masterpiece

This goulash is a full meal by itself. But I love to add a little something. A simple green salad with a bright vinaigrette is perfect. Some crusty garlic bread is great for soaking up the sauce. For garnish, a few fresh parsley leaves make it pretty.

What to drink? A cold glass of milk is my grandson’s pick. For the grown-ups, a simple red wine like a Merlot is lovely. It sips nicely with the rich tomatoes. Which would you choose tonight?

Keeping Your Goulash Cozy for Later

This goulash is even better the next day. Let it cool completely first. Then pop it in the fridge for up to four days. It freezes beautifully for three months. Use a freezer-safe container. Leave a little space at the top for expansion.

To reheat, add a splash of water or broth. Warm it slowly on the stove. Stir it often so it doesn’t stick. I once reheated it too fast and scorched the bottom. What a sad day for my pot!

Batch cooking this saves busy weeknights. Making a double batch takes little extra time. You get a future gift for your tired self. This matters because a ready meal brings peace to a hectic day. Have you ever tried storing it this way? Share below!

Simple Fixes for Common Goulash Troubles

Is your pasta soaking up all the sauce? Just add more hot broth or water. Stir it in a little at a time. The pasta will keep releasing starch as it sits.

Does the flavor taste a bit flat? A pinch more salt or a dash of Worcestershire sauce can fix it. I remember when I forgot the salt entirely. My family asked if I was on a “flavor strike”! Tasting as you cook matters. It builds your confidence to make things just right.

Is the meat not browning nicely? Make sure your pot is hot before adding the oil and beef. Crowding the pan steams the meat. Cooking it in two batches helps. This matters because browning gives the whole dish a deeper, richer flavor. Which of these problems have you run into before?

Your Goulash Questions, Answered

Q: Can I make this gluten-free? A: Yes! Use your favorite gluten-free small pasta. Check your Worcestershire sauce label too.

Q: Can I make it ahead? A: Absolutely. Follow the storage tips above. The flavors get even friendlier overnight.

Q: What if I don’t have ground beef? A: Ground turkey or lentils work great. This dish is very forgiving.

Q: Can I double the recipe? A: You can, but use a very large pot. You need room for everything to simmer.

Q: Any optional add-ins? A: A drained can of corn or kidney beans is lovely. Fun fact: My grandkids call added corn “sunshine confetti.” Which tip will you try first?

  2. Add carrot, onion, celery and garlic and stir until vegetables are softened, 5 minutes. Season with salt, oregano, pepper and sugar and stir to combine.

  4. Add macaroni and stir to combine. 5. Stir in parmesan cheese and season with salt and pepper to taste if needed. Serve with more parmesan.
